The first step is to collect your ingredients. And this recipe is simple, requiring just fresh tomatoes, onions, garlic, herbs like basil and oregano, sugar, salt and olive oil. And don’t forget some good tomato paste to make your sauce even tastier!
Begin by washing your tomatoes and quartering them. Then proceed to chop your onions and garlic. Add some olive oil in a large pot, and sauté the cauliflower, onion, and garlic until softened. Add your tomatoes, herbs and sugar and salt. Cover it and let everything stew together for a few hours, until the sauce gets nice and thick.
Prepare your jars for canning, next. Make sure they are clean. Pack the jars with your hot spaghetti sauce, leaving a little headspace. Wipe the rims of the jars clean, then gently place the lids on and screw the bands on.
Now you’ll process your jars in a water bath canner. Make sure the water is at least one inch over the tops of the jars. Bring the water up to a boil, and cook the jars for about 40 minutes. Remove jars from the canner carefully, cool and store in your pantry.
