First, we will need to gather all the ingredients to prepare the broth. You’ll require beef bones, water, garlic, ginger, green onions, star anise, cinnamon sticks, Sichuan peppercorns and chili peppers. The more chili peppers, the spicier your broth — if you want the heat, adjust accordingly.
First, you roast your beef bones in the oven until brown. This is how you make your broth taste rich. Add the water, garlic, ginger, green onions, star anise, cinnamon sticks, Sichuan peppercorns, and chili peppers to a large pot. Bring to a boil, then reduce heat to simmer. Simmer the broth a minimum of 2 hours for all the flavors to meld.
After a couple of hours of simmering, pass the broth through a strainer to catch all the solid bits, and discard them. You want a nice, clear and flavorful broth. A better flavor can be addes with salt and soy sauce. For a beefier broth, feel free to add beef bouillon cubes too.
Now that your beef broth is ready, it’s time to prepare your hot pot ingredients. You can use thin slices of some beef, pork, chicken or lamb. And some tofu, mushrooms, bok choy and noodles. Put all the ingredients on a plate and take it to the table.
When you want to eat your hot pot, put the pot of broth above a portable stove in the center of the table. Turn on the heat, and bring the broth to a gentle simmer. You can have each person take turns adding in their favourite ingredients to the pot to cook. After you have cooked the ingredients, you can use chopsticks to pull them out and dip it in sauce.
