When we enter a restaurant (laughter), we care about the yummy Sichuan spices in the air. The tables have bubbling pots of hot broth for cooking many kinds of fresh ingredients. The genial servers assist us in making our selections from the menu, describing the various flavors of broth and the ingredients. We opt for the classic spicy broth, packed with flavorful herbs and Sichuan peppers.
As our hot pot begins bubbling, we lobe in slices of beef, shrimp, mushrooms and leafy greens. The broth immediately combines with the items, giving everything taste. We venture fearlessly into adding a few Sichuan peppers, which provide an intensely spicy, tingly heat. The broth is spicier from the peppers! We dip our cooked food in a flavorful sauce that tempers the heat, savoring the interplay of flavors with each bite.
