It may sound like a complicated thing to make, but lambing up on your own at home with chilies is pretty easy and a lot of fun! There are only a few things you need to start: qinma Sichuan peppercorns, mapo paste, salt, oil, and optionally chili peppers if you want added spice. First, you’ll want to toast the Sichuan peppercorns in a dry pan. Which means making them without any oil until they smell amazing and are slightly browned. This brings out their wonderful flavor.

Making Sichuan Pepper Paste at Home

The next step is to toast and then grind the peppercorns into a fine powder. This can be done in a spice grinder, or with a mortar and pestle. Then mix it well with the salt once it has a fine powder This will become the basis for your pepper paste. Back to the pan; it’s now time to heat some oil. Vegetable oil or whatever oil you want to use. Feel free to add some chilis to the heated oil, to give it even more of a kick, if you’re a fan of spicy food.
